Bacon Cheddar & Chive Biscuits

The key to making a perfect biscuit is using very cold ingredients and working quickly. This makes sure the butter doesn’t melt before going into the oven to bake. The easiest way to do this is to prep all your ingredients beforehand and putting them back into the fridge/freezer until you need them.

Ingredients

  • NM’s Buttermilk Biscuit Mix

  • 1/3 cup butter (salted, frozen)

  • 1 2/3 cup buttermilk (very cold)

  • 1 cup sharp cheddar (grated, very cold)

  • 1/2 cup bacon (about 3 slices)

  • 1/4 cup chives (chopped)

  • melted butter (optional)

  1. Preheat your oven to 450.

  2. Chop bacon into small pieces & cook until desired doneness. Set on paper towel lined plate to drain excess fat and cool.

  3. Grate cold butter into a bowl and set aside covered in freezer.

  4. Grate cold sharp cheddar and set aside covered in fridge.

  5. Measure out buttermilk and place back in fridge covered.

  6. Chop chives into small rounds and set aside.

  7. Prepare a heavily floured work surface with a rolling pin ready.

  8. In a large bowl, whisk the biscuit mix together.

  9. Using either your fingers or a fork, mix cheddar, cooled bacon, chives & frozen butter into dry ingredients until coated.

  10. Pour in cold buttermilk and stir with a fork until just incorporated. The dough will be clumpy and not have fully come together yet.

  11. Turn the dough out onto a heavily floured surface, form a ball and roll out into a semi-thin sheet. Fold the sheet in half then in half again, like folding a napkin. Roll the dough out again and repeat. Its okay if the dough feels like its falling apart, this is normal! Just put it back together and keep folding, working quickly so the dough doesn’t get too warm and using more flour to prevent sticking if necessary. Fold and roll at least 4 times, but you can do more (we like to do 6-8).

  12. After your final fold and roll, the dough should be about an inch thick. Cut your biscuits into squares or rounds using a circular mold. Place on a baking sheet close together but not touching. OPTION: Brush the tops of your biscuits with melted butter before baking for a richer flavor.

  13. Bake for 13-16 minutes or until golden brown on top. Enjoy!
